One Day at a Time


Life is so full right now.  

I am...

I am currently running my flourishing retail boutique and jewelry line in our little, yet bustling town of Haleiwa, with 6 employees.

I am homeschooling (with my partner) our very active and daring 7 year old boy.

I am the girlfriend of a writer, farmer and big wave surfer.

I am learning the art of Hawaiian Chant (Oli).

I am an avid bodysurfer and sunset gazer.

I am a participant in our local CSA (Community Supported Agriculture) and farmers market.

I am a yoga practitioner, finding space to practice yoga every day in some form or fashion.

I am a doula, passionate about assisting women in labor to empower them in their birthing experience.

I am constantly day-dreaming of many other upcoming projects that are constantly asking for my attention, ranging from subjects such as mantra, jewelry collaboration with other designers, teaching yoga, leading yoga retreats, facilitating birthing classes.

And on top of that I also do the typical mundane things too, such as wash dishes, do laundry, make our bed, fold my clothes, and make time to get together with my friends...the list goes on. When does it ever stop?

On Sundays. Where I make no plans, except attending an 8:30AM yoga class with Dusty at my friend Kendyl's home, where our kids play together, and I can really dive deep into a challenging practice just a few blocks away from my home. After yoga, we eat a lovely breakfast and we clean house, go to the beach, and have the afternoon FREE.  Occasionally I take a nap, and as my new year commitment is to post a weekly blog, I resist going to sit at my computer and express my thoughts in writing. My patient boyfriend Dusty, who is a writer, is kind, and gently encourages me to write. And that it doesn't have to be monumental, or a long college-essay style paper. Just some words to share. And my son Aukai keeps a daily journal as part of his homeschool, so by blogging I set an example for my son.

Dusty, the lover of big waves that he is, decided to go out surfing for hours since the waves are good, and when they're good, you gotta go. I get it.

So Aukai and I were home together to have mother and son bonding time. What to do today? Aaah yes, perhaps we cook something together! I love to learn, and I believe teaching my child how to cook as a young boy is very important. I only began to cook on my own in college, with no instruction, just some fun roommates trying to figure out life.  And I felt helpless. I think a lot of people in America grow up not knowing how to cook, and that's not very empowering.

I love to eat good food, so discovering how to make new recipes is extremely fun for me. Today, as Aukai and I embarked on our adventure of cooking something new together, he enthusiastically pulled out a raw food cook book, titled "Ani's raw food: Asia," declaring, "We really like this one!" with a cute grin. A gift from Dusty a few years ago, it is one of my favorite recipe books because:

1) I'm Asian.

2) I love her lifestyle philosophies/health tips she shares in the book (intertwined with recipes).

3) She keeps it simple. And I like simple.

After reading the different sections in the table of contents together, Aukai was inspired to flip to the "Desserts" section, where he found a homemade vegan/raw ice kream recipe with 3 separate mini-recipes:

1) The cashew matcha ice kream.

2) The mochi-style coconut "wrap"

3) The chocolate fudge

One of the first ingredients it called for was the water and meat and water of 4 young coconuts, amongst a handful of other ingredients. Aukai quickly said, "I'll be back. You start working on the other stuff Mom. I'm getting the coconuts.  A few moments later, Aukai returned with 3 coconuts in his arms and, grabbing his machete, said, "Here Mom, take your machete, let's chop these up." And we happily chopped our coconuts, as we squatted in the yard, hacking with our machetes.  As we chopped, he explained that he had harvested the coconuts from our neighbor's home, (who have previously given full consent to take coconuts whenever) and was remarking on how clean his machete's cuts were on the coconut. "POP!" went the coconut and the top was off. Fresh, alkaline coconut water.  Talk about quenching your thirst on a voggy Hawaiian day.

After we chopped coconuts, we prepared our wraps by blending the coconut meat with Hawaiian sea salt, and spreading the blended meat onto a dehydrator tray. I incorporated a math lesson into our cooking session by helping Aukai learn the different measurements of cups, tablespoons and teaspoons. Aukai did the spreading on the tray and we placed the coconut wrap in the dehydrator. Ready to go!

We moved onto the chocolate fudge recipe...3/4 cups of maple syrup, 4 TB olive oil and (my favorite) 1/2 cup cacao powder. So easy. Every woman's middle-of-the-afternoon snack dream! We blended it and VOILA! Chocolate fudge, which was more like chocolate syrup...the raw/vegan kind. OMG! I poured it into a jar and sealed the lid. Aukai veraciously licked the inside of the blender and had chocolate all over his hands and face. 

The 5 o'clock hour was creeping upon us, so we decided to make soup for dinner and postpone the ice kream since the coconut wraps wouldn't be down for a few hours anyway. 

I found a delicious Tom Kha Thai Soup with ingredients we (amazingly) already had in our fridge and garden: lemongrass, lime leaves, papaya salad, garlic, coconut oil and salt. Easy peasy. So delicious. We added some red rice to the soup and Aukai slurped it up, literally with his mouth to his bowl and making animal noises. When I was growing up if I ate like a pig and made a mess and slurped my food at the dinner table, I would get in trouble with my parents. But tonight, watching my son enjoy his food made me a happy mom. He worked hard to make his food today, and he earned his keep. He climbed a coconut tree, gathered our food, chopped the coconuts open safely with a knife, and also learned some basic fractions with the measurements. And watching my son enjoy our creation we made together made me proud that I am teaching my little man how to be a responsible and capable human. I'm so grateful to have the opportunity to homeschool my child and be his teacher in so many ways.

We still haven't made the ice kream, and Aukai is fast asleep with a happy opu.  But sometimes that's how the day flows. You start something, and allow the mystery to unfold because having a set goal defined within a certain time period isn't always the way it needs to be. Perhaps there is a divine plan greater than what we can even imagine.  And there's always tomorrow to make that ice kream.
